Ritz-Carlton, Bahrain has welcomed two Michelin starred Chef
Oliver Glowig as consulting chef at its signature restaurant
Primavera. The German-born maestro, who has been making waves
in his adopted home of Italy, was brought in to give Primavera menu
a facelift. The Italian restaurant is glossy with its new Trattoria
Moderna concept.
But rather than taking the hyper chic route, Glowig has infused
his vision of unassuming, yet irresistible cuisine. Take the pesto
linguine — a pure Italian tradition served on your plate. Pasta
cooked to the definition of al dente, tossed into a freshly blended
emulsion of basil, cheese, olive oil and pine nuts. Comfort food
that can come only when the cooking is honest and
unpretentious.
Part of the charm of this restaurant is the mix of what is
familiar and what excites. The tomato risotto with buratta and
anchovies caresses the tongue with creaminess then tickles it with
the brine of fish. Yet the dish pales in comparison with an
innovative lemon risotto with raw seafood. Cold, unadorned and
virtually unseasoned, the seafood draws its flavour when combined
with the warm tangy rice, taking on a ceviche-like quality.
In many ways Primavera adheres to the very essence of its name
— a sense of renewal and beginning, with food that is fresh and
bright. The restaurant has chosen a line of whimsical, beautifully
hand-painted ceramics of the Amalfi coast to flaunt off its
cooking. The bold colours and animal motifs of Solimene pottery
frame the rustic cooking of this modern trattoria and make such a
statement that it’s a running conversation topic throughout the
meal.
But the dishes are far from the only things that catch the eye
at the landmark restaurant. Italian for “Spring,” Primavera will
entice diners with an inspiring décor which evokes an
evergreen garden of freshness and simplicity — the perfect setting
for the irresistibly delicious food. The walls lend a touch of
drama to the innate simplicity of the space with a silver embossed
representation of Boticelli’s Primavera. Allusions to the iconic
painting — featuring a beautiful Venus surrounded by eight divine
figures — can be seen throughout the Bahrain restaurant from gold
carvings of the spring constellation through to the moss in the
private dining room that is evocative of the green gardens of the
painting. Complemented by a terrace overlooking the beautiful
resort and Gulf Sea, Primavera provides a natural backdrop for
Glowig to demonstrate his creative approach to Italian cuisine.
In addition to the restaurant’s cuisine, wine connoisseurs will
delight in Primavera’s bottle collection emphasizing Italian
vintages selected especially to complement the menu. The grape list
features options by the glass, or by the bottle. While Primavera’s
wine selection places special emphasis on presenting a broad and
deep range from Italy, it also includes an extensive selection of
wines from the rest of the world.

to life the Trattoria Moderna experience, where guests are
